Shiitake: Lentinula edodes

Lentinula edodes (Shiitake or Black forest Mushroom)

After a 6-18 month incubation period, a 50-80 � F daytime outdoor temperature is required for these mushrooms to begin emerging (fall fruiter, but has been known to produce in the spring).

This is a favorite cultivated mushroom in Japan.

The mushrooms take 1-2 weeks to reach maturity. Once harvested the logs must sit for 2 weeks prior to more mushrooms appearing (Shiitake grow in a 2 week on, 2 week off period).

Ideal wood types include (but are not limited to) Oak, Sweet Gum, Alder, Ash, Chestnut, Eucalyptus, Beech, Hickory. Maple is NOT an idea wood for Shiitake.

Shiitake mushrooms have been hailed for both their culinary and medicinal benefits in Japan and other parts of Asia for hundreds of years, and their popularity worldwide increases every year. Found primarily on thicker-barked hardwoods like oak, they also do well on "scrub" hardwoods like alder. Mycelium is whitish in color, becoming brown with age. Either stumps or logs can be inoculated. When properly cared for, our hardy strain of Shiitake will begin to fruit in as little as 6 months, with the most substantial fruitings appearing 1 year.

Please call for rush orders before 2:00 Eastern time. That means that some items, to some locations could take two weeks or more. Remember, we're a 50 year old family run business, so feel free to call us for a rush. We can get most of our items out the same day and use next day air and get it to you tomorrow, but you need to call before 2:00 Eastern time.
